Shiro no Kotobuki is a ceremonial grade matcha meant for usucha or koicha preparation. In the Hekisuien principal lineup of matchas, it comes between Daigyoku and Tenko. The color is extremely green with a fine, dense foam. The flavor is bold, savory and concentrated with a very smooth texture. There is some river rock minerality along the edges, a bit of toastiness in the finish, and an intriguing slight tangy note.
Like Hekisuien's other ceremonial matcha, Shiro no Kotobuki is made from shade grown Uji tencha that's been rested before being ground on stone mills. Its name pairs 城 (shiro), castle, with 寿 (kotobuki), a word for celebration and long life.
Hekisuien has been making tea since 1867 and has been recognized as Kyō no Shinise (a long-established Kyoto business).
