A gaiwan is a lidded bowl on a saucer and the most versatile vessel for gong fu brewing. You use a generous amount of leaf for the size of the gaiwan and steep it in a series of short infusions, tilting the lid to hold back the leaves as you pour.
Porcelain and glass gaiwans are neutral and easy to clean, and glass is especially nice for green tea because water cools more quickly in glass. Thick-walled clay gaiwans hold heat longer, which suits puerh, heicha and black tea. We also carry handmade gaiwans, so many pieces are one of a kind. If you're new to gong fu, a plain porcelain gaiwan is a good first pick.
