Kanbayashi Shunsho has been making tea in Uji for more than 450 years and is now run by the 15th generation of the family. Their Biwa garden is one of the Uji Shichimeien, the seven celebrated tea gardens of the Ashikaga shogun Yoshimitsu.
Aya no Mori is a smooth everyday usucha that also makes an easy latte. Biwa no Shiro, named for that garden, brings more depth. Soumei no Mukashi, a favorite of Hōunsai, the 15th-generation grand master of the Urasenke school, sits at the top.
