Shimizu Okumidori Single Cultivar Matcha 20g

The Shimizu family's ninth-generation cultivation in Uji extends across multiple field sites, each with distinct soil characteristics. This Okumidori comes from their Shigisawa fields, where the slightly different terroir produces a matcha with notably different character from their Kageyama teas. The plants are grown under kanreisha shading, a canopy method that suspends black synthetic cloth on a framework above the tea rather than placing it directly on the plants. This approach allows better airflow and cooler temperatures during the shading period while remaining more economical than the traditional honzu rice straw method.

Okumidori, a cultivar developed in the 1970s from a cross between Yabukita and a native Shizuoka variety and registered in 1974, takes its name from its characteristic deep green color. The cultivar is known for producing teas with clean, refreshing character and balanced umami. This expression presents water chestnut and young grass notes with a layered, complex profile that remains light rather than thick. The finish is very clean and the overall impression is refreshing.

The matcha is 100% hand-picked during the single spring harvest and stone-milled.
