This is a truly outstanding single cultivar Asahi matcha from the Shimizu family in the heart of Uji. The plants are grown under honzu shading, the traditional and increasingly rare method using hand-laid rice straw for shading rather than synthetic tarps. Only a handful of families in Uji still practice honzu shading, which creates a cooler environment and very specific light conditions which are ideal for fine matcha.
In the bowl, this matcha is fluffy, deeply engaging, savory, and beautifully rich. We get notes of nori with a substantial but balanced umami depth and an extremely long, pleasant finish.
It is of course hand-picked and stone ground.
