This organically grown Sejak Green comes from Boseong, Korea's "Green Tea Capital" in Jeollanam-do province, where rolling terraced hillsides produce nearly 40% of the country's tea. Boseong sits in one of Korea's rainiest regions, where humid sea breezes from the southern coast and frequent mists create ideal growing conditions that tea farmers have worked with for generations.
In the cup, the tea liquor is dense and enticing. The tea is full-bodied and balanced with prominent notes of light spring veggies. The mouthfeel is notably crisp and sparkly. It's an engaging and delicious tea.
Korean green teas are often processed using a hybrid approach. The leaves are steamed first and then fired, which is why you'll notice the leaves are intensely green, but when steeped there's just a hint of nuttiness in the aroma.
Sejak is the name for a second harvest tea. This means the leaves have a bit more body than the super delicate first flush, but they are still quite tender and young spring leaves. Sejak is often translated to "small sparrow's beak" and indicates that the leaf size is ... you guessed it... very small.
