Pomelo flower tea is a Hanoi specialty. Pomelo blossoms are white and waxy, with a fragrance somewhere between citrus and jasmine, and in the city they turn up in everything from desserts to the water people wash their hair in. To make this tea, a master blender in Hanoi rests fresh blossoms with the leaves for a day, then sifts the flowers out. What's left is the scent.
What makes this one unusual is the base. Hanoi makers traditionally scent Thái Nguyên garden tea, but this is wild Shan Tuyết ("Snow Shan") green tea from old trees in the mountains of Hoang Su Phi, in far northern Vietnam. The green tea stays subtle and a little nutty, with a surprising citrus fragrance on top. It's lighter and less assertive than jasmine, with a gently sweet aftertaste.
