Kogacha Saika Yame Matcha

Kogacha Saika Yame Matcha is toasty, nutty and super smooth. You'll notice the toastiness first on the dry matcha, then again in the aroma after whisking. It's well balanced with no bitterness. This one isn't marine and isn't particularly umami forward, so it drinks warm and comforting.

Saika is from Kogacha, a tea company the Koga family founded in 1938 and still runs today, with the fourth generation now working alongside their parents. They're based in Miyama, which borders Yame, and they've spent decades focused on Yame tea. Gyokuro is their specialty, and they say they handle more of it than anyone else in Japan. Blending is done by the family's certified tea masters (chashi), a skill that takes years to learn. Saika is mostly Yabukita, all from Yame.

It shines as usucha and makes a decadent, satisfying latte.
