Koga Family Yame Sencha has a silky texture and a sweetness that lingers. Steeped cool (around 140/150°F), this Japanese green tea opens up with subtle fruity notes and an unusual roundness, with virtually no bitterness. It's the kind of tea you find yourself reaching for repeatedly.
This Yame tea comes from Kogacha Gyo, a family operation in Fukuoka founded in 1938. Koga Kumiko, a fourth-generation tea maker and instructor, works alongside her mother Satoko (the company's president) and father Masahiro. Their sencha blends Yabukita and Saemidori cultivars (the latter typically reserved for gyokuro) and uses a longer steaming time than standard sencha without quite reaching fukamushi territory. The result sits in an interesting middle ground: more aromatic depth than a typical asamushi, but cleaner and less cloudy than a full deep-steam.
Yame senchas are known for their pronounced sweetness and full body, a result of the region's river fog and dramatic temperature swings between day and night, which encourage theanine development in the leaves.
