Biwa no Shiro from Kanbayashi Shunsho is a premium mid-tier matcha with a distinctive sweet milk caramel aroma and silky texture. This refined usucha delivers prominent nutty aromatics, creating a complex yet approachable flavor profile with no bitterness.
Kanbayashi Shunsho's legacy in Uji tea spans back to the Eiroku period. This matcha is named after the Biwa tea garden, one of the seven historic Uji Shichimeien gardens established by Shogun Ashikaga Yoshimitsu. Today, the tea house continues its tradition of excellence into its 15th generation.
A typical serving for usucha is 2 grams, while a typical serving for a matcha latte is 4 grams.
