A barista grade Kyoto blend from Shimizuya, a label curated by tenth generation Uji matcha producers. This proprietary blend combines hand-picked first flush Samidori from the Shimizu family's own fields with additional Kyoto-grown first and second flush teas. Stone ground on a traditional ishi-usu. Created specifically for lattes and creative matcha beverages, though it's still very solid as an usucha.
As usucha, this matcha is remarkably smooth and integrated with no grassy edges. Very light, restrained bitterness gives way to a green, pleasantly coating aftertaste. Easy, nice foam. As a latte, this is where the blend really comes into its own: green and smooth with light, balanced umami, notes of Swiss milk chocolate, and a bright, lightly sweet finish.
