Masui's Meiji Zairai Sencha
Masui's Meiji Zairai Sencha is a rare heirloom tea from old, seed-grown bushes that Masui-san selected from a Meiji-era Aobe farmer's field and brought back into production. The liquor is lively and crisp, with notes of Asian pear and bok choy. It's clean and light, with a delicate sweetness and a touch of umami in the finish. A very comfortable tea to drink.
Zairai tea is grown from seed rather than cuttings, so every plant in the field is a little different. That gives the liquor a layered, less uniform character than a single-cultivar tea. Most tea in Japan was grown this way until the 1950s.
