Third-generation tea maker Kakuda Tatsuya grows the leaves in the mountains of Okuyame (in Yame, Fukuoka), where morning fog settles over the fields and acts as a natural shade cover. This one is a blend of Yabukita and Tsuyu Hikari. He cultivates specifically for theanine, and it comes in around two percent, a level usually seen in matcha. Higher levels of theanine generally mean more pronounced umami and natural sweetness, and indicate the tea might have a more relaxing effect on the body.
