Yunnan Silver Needle
Any time you find a tea that is all buds you know you have a winner and this is no exception. The Yunnan Province is a beautiful semi-tropical area with an unusually high level of bio-diversity. It is in the far southwest corner of China. Many people consider this area as the home of the first cultivated tea plants. It is also in the area which includes northeastern India and Myanmar where many scientists believe the tea tree was born. If you love the classic Silver Needle white tea from the Fujian Province you will find this light sweet tea to be a fascinating variation on that classic tea.
Use 2 grams of tea for every 6 ounces of water. Generally this works out to 2 teaspoons per every 6 ounces of water. Steep for 3 minutes with 180-degree water.
