Yellow Mountain Misty Green
This is a cloud and mist tea. Cloud and mist teas are highly regarded by the Chinese. In a cloud and mist tea there is less sunlight for photosynthesis. This makes the tea less vegetal and renders a sweeter, smoother tasting tea. The yellow mountains (huang shan in Chinese) in the Anhui Province are famous for the high quality teas they produce.
Use 2 grams of tea for every 6 ounces of water. Generally this works out to a teaspoon per every 6 ounces of water. Steep for 3 minutes with 180-degree water.
