Tsuji Kiyoharu makes exceptional, highly awarded matchas using traditional methods. The meticulousness with which he devotes himself to his teas is mindboggling - so much so that he has been awarded the prestigious Prime Minister's Award for agriculture in 2017! Tsuji practices very intensive garden management and consequently the theanine and amino acid levels of his offerings are among the highest on record.
The taste of this matcha is remarkably well rounded and smooth. The umami is quite high, in balance with the creamy mouthfeel and slightly fruity aromatics. The overall feeling is one of soft and luscious tea luxury. We wholeheartedly recommend using cooler water for this tea (approximately 160 F).
This single cultivar matcha, made from the Uji Hikari cultivar, hails from the red clays Shirakawa, Uji. It is shaded for 60 days with canopy style shading and hand-picked. All of Tsuji's fertilizers are organic.
May 2022 Harvest, rested for 6 months and ground in November. Each order is for 20 grams which is approximately ten bowls of tea using a traditional 2 gram serving.
