  • Tai Ping Hou Kui Green Tea from Anhui, China

    Tai Ping Hou Kui is an incredibly beautiful and fabulously dramatic looking Chinese green tea from Hougang Village in Anhui Province.  While the leaves are some of the largest used in green tea making, the taste is actually quite delicate, sweet, and balanced.  There is a vibrant, lingering mouthfeel.

    This particular lot was entirely made by hand, using a varietal of tea bush that naturally produces large leaves.  It is painstaking work to make Tai Ping Hou Kui - from the very specific initial sorting of plucked leaves (one bud and two leaves), to the de-enzyming in the wok, to initial shaping and roasting, and then to final shaping and drying.  It takes a team of very skilled people to make this tea.

    To best enjoy this tea, we recommend steeping it in a thick walled glass so you can appreciate and enjoy the shape of the leaves.  It is a very forgiving tea that won't easily get bitter or astringent.
