The shallow, wide shape gives the leaves room to open under very little water, and the pot empties in a few seconds so nothing sits stewing between infusions. There is no filter. You tip the lid slightly as you pour and the gap at the rim holds the leaves back, which keeps whole leaves intact and out of the cup.\u003c\/p\u003e\n\u003cp\u003eThese teas typically steep at 55 to 65°C, so the body never gets too hot to hold. That is why the pot has no handle.\u003c\/p\u003e\n\u003cp\u003eThe clay is shudei, the iron-rich red clay Tokoname is known for. Fired unglazed, it is said to soften the astringency of green tea.\u003c\/p\u003e\n\u003cp\u003eThe lines across the surface come from mogake, an Edo period Tokoname technique. The pot is wrapped in amamo, an eelgrass that grows along the Chita Peninsula coast, then fired. The seaweed burns away, but its salts react with the clay underneath and leave brown and grey tracings where the strands lay. No two come out alike.\u003c\/p\u003e\n\u003cp\u003eThe pots come from the workshop of Katayama Hakusan, born 1949, in Tokoname. The workshop belongs to the Tokoname Handmade Kyusu Association, whose members throw their teapots by hand rather than casting or pressing them.\u003c\/p\u003e\n\u003cp\u003eAt ~50ml, this pot makes one small serving through several infusions.\u003c\/p\u003e\n\u003cp\u003eBefore first use, soak in warm water (60-80°C) for 30-60 minutes. After brewing, tap out the leaves and rinse with water. Let it dry completely with the lid off.
