Jia Long Oolong
Our customers and staff at the restaurants are overjoyed when we are able to procure some of this very rare gem from Taiwan.
Made by Mr. Chen at a currently pesticide free farm (in the process of transitioning to biodynamic farming methods) in central Taiwan, this tea offers intense honey notes and a smooth, rich texture. Oxidized to about 60 to 70% and un-roasted.
This is actually a GABA oolong, which technically means it was not oxidized with oxygen, but rather nitrogen (We know... that's a contradiction but bear with us). This process lends the tea a concentrated sweetness. A year of aging rounds out the tea even more.
Use 2 grams of tea for every 6 ounces of water. Generally this works out to a teaspoon per every 6 ounces of water. Steep for 1 to 2 minutes with 205 degree water. Great for multiple re-infusions.
