Huang Shan Mao Feng

Huang Shan Mao Feng comes from the Yellow Mountains in Anhui Province. Anhui Province is known for great teas and for being the area where modern loose-leaf tea was first developed.
Mao Feng teas are considered a high grade of tea. It indicates that the tea is rich in fine hairs that deliver a delicate flavor. In addition, this tea is referred to as a yun wu (cloud and mist) tea. This means it has been grown at a location where a high percentage of the days are covered in clouds and/or mist. The lack of sunlight changes the chemistry of the tea so that there are fewer catechins and more L-theanine and caffeine. These chemical changes create a smoother sweeter tea that goes down easy.

Use 2 grams of tea for every 6 ounces of water. Generally this works out to a teaspoon per every 6 ounces of water. Steep for 3 minutes with 180-degree water.
