This tea is a happy synthesis of two popular Japanese green teas. Genmaicha is the famous tea that combines green tea with popped brown rice giving the tea a nutty roasted taste. We have a version of this tea called Genmaicha Extra Green that combines genmaicha with matcha powder. Hojicha is a tea developed in 1920 by a Kyoto tea merchant. He roasted some leftover tea and found that it produced a refreshing brown liquid with more body than a regular green tea and with (like genmaicha) a nutty flavor. You can see how they complement each other.
Japanese green tea and rice
Use 2 grams of tea for every 6 ounces of water. Generally this works out to 1¼ teaspoons per every 6 ounces of water for genmai-hojicha. Steep for 1 minute with boiling water.
