This is a beautiful aged white tea cake with leaves from spring 2012, Zheng He, Fujian Province. The taste has developed over the years from a light and bright Bai Mu Dan to smooth, fruity, dark tea with gorgeous notes of spice and dried fruit and a thick honey sweetness. The pluck is two leaves and a bud, all harvested from one farmer's garden (not a blend of white teas bought at market).
White tea overall is quite forgiving and easy to steep, and that is especially true of aged white teas. They can re-infuse many times, and they seem to never get bitter. We suggest trying them simmered stovetop style sometime as well as regular teapot style and gong fu style.
